Courgette gluten-free cake

Courgette is an excellent and healthy ingredient for cakes, for real! It gives moisture, soft consistency, and lots of minerals and vitamins! You can reinvent the idea of cakes and change the old concept of guilty pleasures to a new version of tasty and healthy desserts. Nobody will notice the difference, except later when they will still feel energetic and in shape!


But still today, it is not always easy to sell the idea of healthy cakes because people associate them with "not too tasty" or "not too good," and there are many assumptions that they wouldn't like it, even before trying. And assumptions may blur our experience, stopping us from discovering or learning new things, which happens to all of us.


So! If you are the one that is trying to introduce new ways of cooking or ingredients in your family, you can try to put more effort into how you present it; in the end, the decoration sells the cake. Yes, whether we like it or not, most people still consume things by their appearance! So you can make your healthy recipes, and make them look so amazing, that you will not need to try to convince anyone about their goodness.




Ingredients

150 rice flour

30 g cacao

255 g grated raw courgette

2 big eggs

75 g dark baking chocolate

50 g raw cane sugar

1 tbsp baking soda

A pinch of salt


Instructions

  1. Preheat the oven to 180ºC while you prepare the rest of the steps

  2. Prepare the dry ingredients in a bowl: add flour, baking soda, salt, sugar, and cacao

  3. Prepare the wet ingredients: beat well the eggs

  4. Mix both

  5. Add the mixture to a baking pan. Cover the pan with non-stick baking paper, and you can use an extra pinch of butter or oil to spread the surface.

  6. Bake it for around 20-25 minutes or until a fork comes clean.

  7. Let it rest before cutting for another 30 minutes, and voilá! c'est done!

  8. Store in an airtight container to make the soft texture last longer, lasting from 3 to 5 days.




Decoration

It is still true that the decoration sells the cake, so if you are going to share it with friends or family, try to put some effort into the cover! You can simply use some crushed cocoa beans as we did in the photo here, which also gives a crunchy texture and extra properties, or get more ideas for easy decorations in our previous post here.
