The best, easiest and healthiest banana cookies adapted for everyone regardless food preferences or intolerances.
Bananas are the key ingredient that add sweetness and hold them together with no need of extra added sugars, eggs or flours. Plus, they are also super easy and fun to do with kids!
2 big or 300 g ripe bananas
1 cup or 100 g dried coconut
Jam (homemade berries or lemon jam) or almonds
Preheat the oven at 180º.
Blend the bananas and put it a cup.
Add the dried coconut in the banana pureé and stir with a spoon. This is already the main batter to make the cookies where you can add "surprises" like chocolate chips, raisins, nuts, etc.. I give you here my two favourite options!
Jam filling: Place 1 t tbsp of the batter on a baking paper, then add a 1 or 1/2 tsp of your favourite jam in the middle and cover it with a bit more of the banana batter. Sprinkle with dried coconut for crispiness
Nuts filling: Place 1 tbsp of the batter and hide one almond or walnut in the center. Sprinkle with chocolate chips and dried coconut
Bake them for about 15-20 minutes. If you sprinkled them with dried coconut you will see that when it becomes golden, they are ready!
Wait for about 10 minutes outside oven before trying them.
Bananas are great source of natural sugars, potassium and phosphorus to help your body feel energised, recover after exercise, and even improve sleep. And if you live in a tropical place where bananas are cheap and available during the season, as i do myself, this is a great way to do use them and offer to friends!
