The best, easiest, and healthiest banana cookies are adapted for everyone regardless of food preferences or intolerances.
Bananas are the critical ingredient that adds sweetness and holds them together without extra added sugars, eggs, or flour. Plus, they are also super easy and fun to do with kids!
2 big or 300 g ripe bananas
1 cup or 100 g dried coconut
Jam (homemade berries or lemon jam) or almonds
Preheat the oven to 180º.
Blend the bananas and put them in a cup.
Add the dried coconut to the banana pureé and stir with a spoon. This is already the main batter to make the cookies, where you can add "surprises" like chocolate chips, raisins, nuts, etc.. I'll give you here my two favorite options!
Jam filling: Place 1 t tbsp of the batter on baking paper, then add 1 or 1/2 tsp of your favorite jam in the middle and cover it with a bit more of the banana batter. Sprinkle with dried coconut for crispiness
Nuts filling: Place 1 tbsp of the batter and hide one almond or walnut in the center. Sprinkle with chocolate chips and dried coconut
Bake them for about 15-20 minutes. If you sprinkle them with dried coconut, you will see that when it becomes golden, they are ready!
Wait for about 10 minutes outside the oven before trying them.
